Better Dairy is a UK startup which is working to create cheese and yogurt without cows. They make products in a way that is healthier for people and better for the planet.

The company wants its cheese to taste, melt, and stretch like regular cheese without using cows. They use fermentation to create milk proteins like casein, which makes cheese taste and feel like the real thing. By doing this, they avoid the environmental problems of traditional dairy farming, such as methane emissions and using large amounts of resources, especially water and land.

Better Dairy is making casein and another protein, osteopontin, in a small lab. They plan to increase production and hope to get approval to sell casein by 2028 and osteopontin by 2027.

Difficult words: melt (to become soft or liquid by heat), fermentation (making food using microorganisms), avoid (to keep away from something).
