Organic caviar – level 3

A sturgeon farm in Riofrío, southern Spain, produces what it calls the world’s first organic caviar.
The product contains only sturgeon eggs and salt, with no additives, and is made entirely in the European Union. The fish are raised in natural spring water and are fed organic vegetables and sustainably sourced fishmeal.
According to veterinarian Ignacio Alba Alejandre, the farm doesn’t speed up the sturgeons’ slow growth and allows them to develop naturally. The company produces around two tonnes of caviar each year in three varieties, and exports to countries such as Japan, France, and the UK. The most exclusive type can cost up to 8,000 euros per kilo. In addition, the farm sells about 15 tonnes of sturgeon meat annually.
Managers say organic certification guarantees high standards and good flavours. Restaurants in Spain are increasingly adding caviar to their menus, as it has become more affordable. Globally, most caviar now comes from Chinese fish farms.
